Coddled Cod Recipe
Ingredients
- 1/4 cup fine dry bread crumbs
- 2 lbs. cod or sole
- 1/4 cup fine dry bread crumbs
- 1 14 oz. canned tomatoes, broken up
- 2 teaspoon(s) dried whole oregano
- 2 teaspoon(s) dried sweet basil
- 1 pinch salt
- 1 pinch pepper
- 2/3 cup light salad dressing or mayonnaise
- 2/3 cup grated medium or sharp cheddar cheese
- 1/2 teaspoon lemon juice
- ½ teaspoon prepared mustard
Directions
- Sprinkle firs amount of bread crumbs in single layer in ungreased baking sheet with sides. Lay cod over top. Sprinkle with second amount of bread crumbs.
- Mix tomatoes, oregano, basil, salt and pepper in bowl. Pour carefully over fish.
- Stir salad dressing, cheese, lemon juice and mustard together in small bowl. Spoon over tomato mixture. Bake, uncovered. in 400 degrees F oven for about 20 minutes until fish flakes when tested with fork.
