Coddled Cod Recipe


  • 1/4 cup fine dry bread crumbs
  • 2 lbs. cod or sole
  • 1/4 cup fine dry bread crumbs
  •  1 14 oz. canned tomatoes, broken up
  • 2 teaspoon(s) dried whole oregano
  • 2 teaspoon(s) dried sweet basil
  • 1 pinch salt
  • 1 pinch pepper
  • 2/3 cup light salad dressing or mayonnaise
  • 2/3 cup grated medium or sharp cheddar cheese
  • 1/2 teaspoon lemon juice
  • ½ teaspoon prepared mustard


  1. Sprinkle firs amount of bread crumbs in single layer in ungreased baking sheet with sides. Lay cod over top. Sprinkle with second amount of bread crumbs.
  2. Mix tomatoes, oregano, basil, salt and pepper in bowl. Pour carefully over fish.
  3. Stir salad dressing, cheese, lemon juice and mustard together in small bowl. Spoon over tomato mixture. Bake, uncovered. in 400 degrees F oven for about 20 minutes until fish flakes when tested with fork.
